We had another fun weekend with Amara. Saturday was her first Cross Country meet. It was 6th, 7th and 8th graders from 6 local schools. This is Santiago’s first Cross Country Meet ever and I have to give a big shout out to their PE couch who organized the Track Team. They meet after school 4 nights a week. Amara loves it and while she didn’t win, she did finish the one-mile race. We had no idea that during the last third of the race she slipped and fell skinning her right knee and elbow. She still finished the race!

A few weeks ago, when Amara was over we had a blast doing a strange cooking project that will have to wait for another post. It had been her idea and was so much fun that I told her then to find a recipe for something she wanted to make or bake the next time she came over. She called me about an hour in advance and said she had found the perfect cupcake recipe to make. Since the list of things she needed for these cupcakes was long we decided I should pick her up and take her to the grocery store with me. Shopping with her is always more fun than shopping alone!

As we headed home from the store, I told her that we were going to go home and while dinner was cooking, we were going to make a special dessert for Grampy. We would spend the next morning making her cupcakes. Grampy has really been wanting a “lemon ice box pie”. I even got the recipe from his Dad! When we got home, I explained it would be very fast and easy to make as it was just sweetened condensed milk, egg yolks and lemon juice and you don’t even have to bake it. Plus we had bought a pre-made shortbread pie-crust! You just let it set up in the freezer for a few hours. Amara gave me a rather questioning look and said, “I didn’t think you were supposed to eat uncooked eggs, Grandma.” So I sent her to Grampy! I knew he would love explaining to her how the juice cooks the eggs – and he did!

We started watching the movie “Tomorrowland” while we dined on chicken strips and fries and waited for our dessert to set up. Amara ate her piece of pie and while it was good, she was convinced she could taste the eggs! Grampy loved the pie and has requested I make it again but this time remember to get the Cool Whip. Amara made it about half way through the movie when she announced she was tired and wanted to go to bed. It really had been a long day.

She was up at 7 AM ready to start making her cupcakes! The recipe was for orange, gray and brown cat cupcakes. We didn’t make the gray kitty because I don’t have any black food coloring and we didn’t have very good whiskers because we couldn’t get the right licorice at the grocery store. But the pictures really tell the story. She did all the work I just kept her company and gave advice when asked. It was so much fun and they were very tasty! One of the best parts was when she took the frosting bag and went running into the office and told Grampy to hold his finger out so she could frost it! She also took the little dish of mini M&Ms and gave it to him when she was done. She does love her Grampy! It was another fun weekend!

    Oh Kc this does sound like a really fun time… Amara is such a great little baker 🙂

    I’m sorry to hear she fell and skinned her knees but it’s awesome that got up and finished… that’s a real sign of a winner 😉

      She was the only one at the first aid station and someone commented that she gave him something to do. Last weekend it was in the mid 90s here and those kids would have melted — the first aid station would have been crazy busy. This Saturday it was just mid 80s and since they started at 8 AM it was pretty comfortable.

    Uncle Mark & I are so proud of Amara for giving her all for the cross country team! I’m glad she’s having fun with it!

    The cupcakes turned out great! What a cute idea!

    It’s amazing to see how fast Amara is growing up! She’s turning into a beautiful young woman!

      Sometimes I just look at her and shake my head. I have to keep reminding myself she is no longer in 5th grade! She really is growing up fast and she is sure turning out good!

    Amara is getting so tall – growing right up. But, she still looks like her younger photos just more beautiful. 🙂 I love her cupcakes. She did a wonderful job on them. Down the road, her family is going to be appreciative of her culinary skills that you fostered plus she’ll have such happy memories of her time with Grandma and Grampy. 🙂

      I am so glad we both enjoy cooking and baking. It is so fun to just stand in the kitchen and hear all about everything as she frosts cupcakes. I’m a very lucky Grandma and we are making great memories.

    This IS fun! The cat cupcakes are so cute! And of course, Amara was the chef-in-charge, something that happens best at grandma’s house where you can never do wrong! I love reading about these happy times together!
    Very impressed with the Cross Country team and the way running is being encouraged by schools. You don’t need to be able to shoot a basket to participate, and if you work towards just improving your time, it doesn’t really matter who comes in first. Amara looks beautiful running – and I’m not surprised she wouldn’t quit after a small mishap!

      Because Santiago started as a K-5 they don’t have as many sports as the middle schools and junior highs do. It is one of the things the parents keep asking for so it was great that the PE couch is trying to help make that happen. This year the school is offering 8 week programs after school. A few weeks ago her Mom got her a Fitbit as we both wear them and Jenna was very curious how many steps Amara gets in a day. Well she has been kicking my butt! I am hoping that now that Cross Country is over for a while I can start beating her! She has really flaunted the fact she is beating me! I want some revenge.

      She was very determined and I just knew she would be up at the crack of dawn! I know I say it all the time but she is just so much fun!

      Thanks Kristi. We will have to look into this and of course she is a Harry Potter fan! She has read them all and seen all the movies numerous times. Thanks again for the suggestion.

    Amara is lovely. The twins, Ben and Amanda, who are 12 and in 7th grade are running cross country. Their meets are soon over. My Grands love to bake and help me cook, too. Those kitty cupcakes look yummy. They grow so fast – luckily, you and I live close enough to enjoy them.

      I’m glad you have your grandchildren close by. Being a local grandparent is the best! We get to enjoy all the little things. Just going to Target together is an adventure. And yes, they do grow up much too fast!

    I just loved it when my kids participated in cross country and track. Each student beat their own records. I was proud of the whole team! Good for Amara to finish when it would have been easy to quit!

      One of the things I liked the best about the day was the comradery! Their were a couple of students who now go to other schools but they didn’t care. They all hugged and cheered one another on!

    I have a little one who just wanted to finish and not be last. He did, second to last, but not last. I love when they just try everything and be a kid. It will be interesting to see the confidence all this will give Amara to pursue which ever dreams she decides upon.

    Adorable cupcakes! This has made me pretty darn hungry! (You should share that luscious-sounding pie recipe. I won’t even care if I can taste the eggs!) 😀

    Amara’s a true champ… at baking AND finishing the race despite an injury! Woot! You go, girl!

      The cupcakes were fun and so was the pie. I didn’t think to include the recipe! So here you go!

      I used a packaged cookie crumb crust or you can make your own. For the filling beat 2 egg yolks well. Add can of sweetened condensed milk and mix thoroughly. Add 2/3 cup lemon juice and beat it some more! It isn’t super thick. Pour into pie crust and chill in freezer for at least 3 or 4 hours. Top with the Cool Whip I forgot to get! It is really good and kind of tart! If you like lemon you will like this. WARNING: the next time I would double the filling recipe! I like a thicker pie. Let me know if you try it!

      She is a lucky little girl! Her parents really do encourage her to be very well rounded! And she sure is a lot of fun!
